dang quesidillas

I recently have decided to not eat meat.  It might not last forever, but for right now I am vegetarian.  I won’t go into the long story of why this is the case, lets just say I don’t know why it took me the 30 (cough cough)…or so years to figure out that meat is muscle.  So I have been getting new recipes for veggie meals.  So I will share some that are my favorite. 

Veggie quesidillas

1 bunch of spinach

1/2 tomato

1 scallion

1 box mushrooms sliced

1 avacado

handful of cilantro (more if you like it)

 approx 1/4 cup balsamic vinegar

2 to 3 Tablespoons olive oil

3 to 4 squirts lime juice

favorite cheese ( I like the flavor of pepper jack with this)

Put all veggies in bowl, including cilantro.  I am a throw it in until it looks good kind of gal so you can add more or less of something to your liking.  One thing I will say is that you need to cut the seeds our of the tomatoes so it isn’t runny.  Pour vinegar, oil and lime juice over veggies and stir to coat.  Let marinade for 20 minutes.

Place shredded cheese on one side of tortilla, spread veggies over cheese, add more cheese on top of veggie’s then top with another tortilla.  Put on hot buttered pan.  Wait until brown and carefully, carefully turn over.  I must say this is an art I have not yet got right. So I am still practicing.  It is better if it is a big frying pan, or you can do smaller tortillas. Cut in slices and enjoy!  Makes about 4 big ones.

I wished I could get the dang picture of the dang quesidillas to down load so you can see what it looks like, but as for now you will have to make it so you can see it.  The smell is delightful too!
